Low Carb Breakfast: Egg and Salmon

Good morning, friends! :] I hope you all had a fabulous weekend – I spent most of mine at the pool and the gym on the roof of my new building. Not too shabby. I have a number of people close to me who told me their doctors told them to watch the carb intake and it is a little difficult to do when a pretty much all of our favorite things are packed with carbs right? Sometimes, sacrifices must be made for the greater health though. So I am shifting my focus to easy meal prep + planning and attempting to try new foods that actually taste good and help out my loved ones here. Breakfast can be a bit difficult to change – it is so easy to just pour yourself a bowl of cereal or throw a piece of bread in the toaster and be on your way to work/class but your body ends up paying for it as life moves forward.

As a fan of easy on-the-run breakfasts, I knew I was going to have to make a change in my morning routine to stay in line with the low carb lifestyle’s guidelines. This breakfast bowl will absolutely be a new and delicious staple in my weekday routine.

Rich with the “good” fats your body needs to produce energy (omega-3 fatty acids) and protein, this low-carb, 335-calorie breakfast takes about 5 minutes to prepare and it honestly felt like I have treated myself to a five star brunch at a local hot spot (Chicago, we know there are a lot of amazing brunch places in this city – this tops anything I have ever had from any of those though). It will fill you up, fuel your morning, and keep you full until lunch break arrives.

You Will Need
1 teaspoon butter
2 fresh eggs
2 thin slices of wild smoked salmon
½ cup arugula
¼ avocado, diced
Pinch of fresh ground pepper

1. Heat butter over medium heat and swirl around in a nonstick pan. Slowly put two (unscrambled) eggs into the pan and cook until done (about 4 minutes)

2. While your eggs are cooking, assemble your arugula, avocado, and smoked salmon on a plate. Squeeze lemon juice over everything, and sprinkle with pepper.
3. Once your eggs are fully cooked, slide them onto your plate, and enjoy immediately.

Tonight, I am heading to Sunset Beach Yoga at North Avenue Beach (still cannot believe beach volley is over for the summer — Lime Green Mean Machine 2K17 will return next summer as the raining champions. I only have 5 more classes of beach yoga left and then it is back to the regular studio for the winter!! 😦  Enjoy your Monday!!
